Peach Crumb Bars

Good morning everyone!

Today I’m bringing a n amazing recipe that i tried this past summer with my cousin and it’s really special for every occasion. The idea of making this bars comes from one of favorite blog Cooking classy because I think is a recipe really useful when you have a lot of peaches or any fruit left and you don’t know what to do with it.

This bars are delicious and I don’t even know why it has been such a long time without showing it to you. The flavors that we are adding to the peaches mixture is completely optional but add that extra special flavor that i love.

The actual bars have two parts, the crumbly dough which is amazing and the peaches sugary filling which you can absolutely change with any juicy fruit like plumb, pears, apples… you name it.

I hope you find it easy and you make at home.

Ingredients for the crumbly base and top:

  • 390 gr / 3 cups of all-purpose flour
  • 200 gr / 1 cup pf white granulated sugar
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • 170 gr / 3/4 cups of cold and chopped unsalted butter
  • 1 large free- range egg
  • 70 gr / 1/4 cups of greek yogurt (sour cream)
  • 1 and 1/2 tsp of vanilla extract (optional)

Method:

Preheat your oven to 180 C or 350 F and line a baking tray with non-stick cooking spray or butter and parchment paper.

To make this crumbly base we need to divide the ingredients into dry and wet.

In a large mixing bowl we are going to combined all the dry, so we mixed together the flour, baking powder, salt and sugar.

And in a jug or another mixing bowl we combined all the wet ingredients, so the egg the greek yogurt or sour cram (whatever you can find) and the vanilla extract.

Now we need to incorporate the cold butter into the dry ingredients until it remains fine crumbs. Once we reach that stage we can add the wet into the dry and mix with a fork or even our hand until we get a really kind of sticky and crumbly dough.

We need to divide this mix by half and pour half of it into our baking tray and live the remain half to spinkle on top after the filling.

Ingredients for the peaches filling:

  • 4 big peaches / 4 and 1/2 cups of chopped peaches
  • 150 gr / 3/4 cups of granulated white sugar
  • 3 tablespoons of cornstarch
  • 1/2 tsp of cinnamon (optional)
  • 1/4 tsp nutmeg (optional)
  • 1/4 tsp ginger (optional)
  • 2 tsp of orange juice (better if it’s freshly squeezed)
  • 1 tsp of orange zest (optional)

Method:

In a large mixing we are going to combine all the ingredients, we add the chopped peaches and we toss them with the remain sugar, all the spices, cornstarch and orange zest and juice. I like to do this with my hands so that all the peaches get infused with the different flavors.

We add this beautiful filling to our tray on top the dough and the finish touch is to sprinkles beats of the left dough on top of the filling and one this is beaked with formed a fantastic and yummy crust on top.

We bake this bars at the same preheat temperature, 180 C or 350 for around 45 to 50 until the peaches ar fully cooked and the dough is golden- brown.

Once is fully cooked we take it out of the oven and we wait around 30 minutes until is more coolled and we serve it in bars form we some whipped cream or vanilla ice-cream.
