
Hey Guys! It´s been foverer since I´ve written in English but I feel like most of the people that read my blog are Spanish speaking people. Nonthless I still want to make this blog available to as many people as possible and therefore, today I´m showing you one of my favourite recipes in the world!
Seriously, this recipe is to die for, super simple and let´s be serious… who doesn´t love pancakes??

The other day, I was talking with this friend of mine and she asked me about my recipes in English and If I had any in my blog. Indeed, I´ve got a few but not that many so I decided to show you one of the blog most popular pancakes recipe ( the photos are the same haha) but it´s super delicious. And that way, the weeks that I don´t have time to create new recipes (like this one… exams)I´ll be posting older recipes in English for all of you who wish to join the community!!
Let´s do it!
Ingredients:
- 1 cup or 110 grams of flour
- 1 teaspoon of baking powder (I use Royal brand)
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 1 spoon of sugar
- 240 ml of buttermilk (see substitution here)
- 1 egg
- 1 teaspoon vanilla extract or paste
- 2 tablespoons of soft olive oil or melted butter
Method:
In a bowl, we sift the flour, the baking powder, baking soda, salt and sugar and reserve. In another bowl or jug, mix the homemade buttermilk with the egg and vanilla.
Add the liquid ingredients to the dry ones and beat until incorporated, once you do not see more traces of flour, add the oil and beat until you do not get a single lump. We reserve the mixture in the fridge for 10 minutes.
In a small skillet or griddle, heat over medium heat with a nut of butter. Once the mixture is at rest, place a good spoonful of dough and let brown about 3 minutes until bubbles appear at the edges. We turn the pancake and let brown about 3 minutes more. We take it out and continue cooking the rest.
